Mainly Stacks were put on livestock hauler guys as to keep the soot out of the lungs of cattle and horse trailers. Then as Diesel performance caught on in a serious manner say 10 years ago Stacks were found to be the cure @ the drag strip to stop the delay of the IR beam at the starting line caused by the heavy soot cloud when launching from the line.
As more and more daily driver modded (meaning programmer , exhaust and turbo/injector combos) diesels put out a "Mild" average of 400-600 Hp pretty much it is a safe bet that 80% have been to the track and stacks have caught on to avoid the dreadded "Beam Lag". Also recreational sled pulling has also become a DHRA mecca that stacks keeps exhaust skyward over the sled operator.
In a dirt situation like a Trail or a sled pulling track conventional exhaust blows dirt / dust everywhere due to the higher exhaust velocity that bigger diesels create. In the Jeeps build here I can see the trail dust issue.
Also for street duty it keeps the "Coal Roll" out of the path of the person's vision path when running from light to light and keeps it behind the truck (altho I am sure such unsafe antics never happen on the street )

Another reason is the fact that we as an exhaust manufacturer sell many stacks to customers becuase they are needed...... Im just using a stack on this project to change things up a little and to advertise the MBRP line.
If it wasn't for our exhaust line we wouldn't be building vehicles like this.
