I feel like tire size is written to confuse us! Hopefully someone can help me and answer this question!
I have stock JK BFG Gooderyear MT 255/75R17 tires and found a good deal on some Open Country MT 35/12.5/17 according to the seller.
Would I be able to get a shop to just straight swap these rubbers? Or are the 35s not compatible with my 17 inch rubicon rims?

They would fit, although the rims are outside the tire's recommended width, but you're going to have to do some mods to your rig. Wheel spacers at the least, some type of lift, or some serious trimming.

Also keep in mind that making that big of difference in tires will affect your performance. If you have not already I would strongly recommend a programmer like the AEV ProCal to adjust your speedometer and shift points if you have a manual transmission. Additionally think about referring. In my 2011 Sport with 3.73 gears Canvas was a dog and could not use 6th gear unless I was going down hill with a strong wind at my back.
As mentioned above you can run 35's on a stock lift with trimmed fenders and trimmed pinch seams for the rear wheels.

Thanks guys. I do have a 2.5 inch lift already. But you are saying with my stock rim with 0 offset this tire would touch my pinch seam?
Someone else said it would fit but it's beyond the recommended width. By how much? And what are my concerns there?

Also how much of a spacer would I need to clear the pinch seam?

It's not the pinch seam(well maybe that too) but you'll rub on your front tires whenever you turn without spacers on stick wheels. You can trim the pinch seam if it rubs.
