Default P0128, burning coolant, and new water pump

Hey all, I had a P0128 code coming on and off for about 2 weeks. Didn't think too much of it. I put about 300 miles on it and then the water pump seal failed and I was pouring coolant. I replaced the water pump and thought that would fix everything. About 450 miles later, the P0128 code pops up again and I my coolant reservoir is empty. I topped up coolant and the code remains on. I've smelled it burning coolant since day 1, but only had to top off coolant maybe once a year. Nothing like this. Oil looks clean. 2013 JK, ~90k miles. Otherwise running fine. P0128 points to a sensor issue, but sensor issues shouldn't be burning coolant. And is it a coincidence the water pump went? Not sure what problem is the primary cause.
