Anitfreeze does havea distinct oder but I have never associated it with maple syrup. I believe that with a heater core leak the windows fog up and are more difficult to clear. Good luck

Might want to have a look at your water pump. Mine has a slight leak at the bottom of it. Passengers side. I did tighten the bolts just a little, and I'm going to watch it. Never smelled with the heater on, but i was getting a bit of odor when I was going slow.

Try this as it also works for summer AC stink. Put blower to pull air in from outside vent and spray Lysol in the outside vent. If there is something in the system that is making the stink, this could clean/kill it. Since its winter, it probably won't fix it but you could try it.

It could be a coolant leak. I know coolant when cold does not smell like maple syrup, however if you have even inhaled hot coolant steam or vapor it does have a similarity to maple syrup.
I would start with the obvious and check your coolant level and see if it drops over the next few days or weeks. Check it and the same time, like when the engine is cold or hot. It could be a higher level when hot and contract when cold. So you need to always check it hot or always cold to be accurate.

take your JK to the dealer and get a coolant pressure leak down test done
you don't want to be inhaling glycol or what ever it is now.
they will tell you right away if it is a leak or not
if not then try the lysol thing i do that 2 times a year kills the funckies in the ac and heater cores
