I was thinking about swapping out the stock front bumper for an aftermarket one, but I was wondering if that has any effect upon the airbag system. Is the trigger set in the mounts since the outer part of the bumper is just plastic anyways...? Will most aftermarket bumpers stubby style or otherwise function just the same.

And just out of curiosity has anyone deployed their airbags while off roading...?

The airbags are triggered by an accelerometer, not by the crush cans on the front bumper. Just a few bolts and your bumper will come off safely.
