I've used custom machined steel spacers, and spydertrax spacers without issue. Be sure to apply red threadlock to your rotor studs as part of the install. Then it's smooth sailing. I'm currently running spacers on my rear axle and my spare tire carrier.

I have 1.5" Spidertrax spacers on my JK. I'm running 35's on stock rims and you need minimum 1" spacers to do that. I also run spacers on my 2004 TJ. Never had ANY problems with either. Just make sure you Loctite the spacer lug nuts and peridoically check them.

Yes, if you are trying to use the stock rims, or rims with insufficient backspacing with larger tires, correct spacers will prevent them from rubbing. However, it is generally better to just buy aftermarket rims with correct backspacing and width for larger tires.
In terms of brands, Spidertrax are very popular and robust. BORA makes some of the best spacers I've seen and offer a lifetime warranty. I'm running custom ones on my trailer.
