The 2.5" lift is plenty for 35s, even without flat fenders. As long as you have the proper wheel backspacing, you won't see any rub. I would not go bigger than that unless you want to start spending big bucks upgrading. For a daily driver that only sees light trails you can even get away with just a 1.5" leveling kit. The flat fenders buy you a lot of clearance and I prefer to keep the center of gravity lower.

I personally would steer clear of the RE kits but that's just my opinion. I'm a big fan of Metal Cloak and Teraflex makes some decent kits as well.
