Do you think you could get by with a 1.5-2" coil lift ie Teraflex 1.5 performance coils?

you dont need any lift. Add about 1.5" bumpstop and you should be fine.

seems like that would really limit off road flex ability. My plans are to maybe keep stock rims (14 rubicon) use 1 to 1.25" wheel spacers and and a 1.5" teraflex lift if that would give me sufficient off road flex. thanks

Well if you were just planning on leveling coils you wont see any additional flex over stock, just increased ride height. The stock shocks are going to limit your droop and you will still require additional bumpstop up front to keep the tires from contacting the fenders. If you really want to see better performance, you either need to purchase longer shocks or trim the fenders so you wont require additional bumpstop.

None, is the answer to your op.
Lift does not=flex and like D_angle said you will still need the added bump stop with the teraflex kit.
Either way you will have less articulation then stock.
Trimming your fenders will allow you to nix the added bump stops and keep the stock amount of articulation.
