Ball joints are checked by jacking the tire up, and prying it up and down, looking for excessive vertical play on the lower joint, then grabbing the tire at 12 and 6, looking for side play in the upper joint.

The unit bearing is checked as you described, plus turning the hub with the wheel removed, listening for noise and feeling for roughness.
