Tire/rim questions
Not really sure how rims sizes work. I want to put the XD series monster 18"x9" wheel on my wifes sahara jku, also trying to figure out this whole offset thing and what is the biggest tire i can put on it without rubbing. Also looks like bolt pattern has to be 5x127.00. It's her daily driver so I don't really want to lift it but might do a 2" puck lift if I have to make some room for them. Are there links to sites that explain this stuff? Any help would be greatly appreciated

5x5 and 5x127 are the same thing, just measuring with different units.
Offset is a calculation that uses the specific rim width to determine how far in or out of the wheel wells the rims sit. Though offset may be the more accurate measurement, it will be easier to just convert it backspace. Stock rims are around a 6 backspace. As that number goes down, the rims move out of the wells.
The backspace you want will depend on the tire size. As it gets taller/wider, you will want to consider how far out to move them. A common recommendation for 35x12.50 tires is a 4.50 backspace, or about 1.5" further out than stock.
Are you keeping stock fender flares? Chopping them? Moving to flat flares? Adding bumpstop if you go with the lift?
Some people indicate that 33x10.50's will fit on stock rims with no lift and no rubbing. 33x12.50's 'should' work with no lift and proper backspace, but might contact the lip of the flares instead of tucking inside. It just depends on the overall setup:lift, flares, disconnecting, bumpstops, backspace, etc. You could run 35's with flat flares and enough backspace. Or 2" lift and stock flares and maybe a bit taller bumpstop. Or ...

Ok. This is an everyday question on here it seems. I have a 2016 rubi hard rock. I did a 3" lift to fit my 35's. I have fuel 18x9 rims with 285/75/18 (34.75/11.4/18) tires. I had the same concern as you did as i did not want to trim, rub, etc.
To address what tire to get.
The general rule of thumb is the rim should be close to half the tire height. So an 18" rim is 35-37 on so on. This does not mean you can not run 33's on a 18 just gets goofy looking and can stretch you tire weird. Google image search jeeps to see different setups.
Tire rub:
I ran a tire one inch less then most to avoid rub and trimming. Some say there is no rub with 12.5" widths. I find that hard to believe since when i tuck i miss my fender lip by less than a half inch.
Lifts:
To each there own on this. There is a sticky up top for the ins and outs of this subject.
I chose 3" due to that is all i needed to fit my tires. I have a pieced together setup as follows
3" synergy springs (progressive rate)
BDS nitro shocks
Zone adjustable trac bar
Zone rear sway bar links ( stock rears go up front)
JSpec adjustable front lower control arms
BDS dual steering stabilizer w/BDS nitro shocks
I am happy with this setup.
Hope some of this helps.
P.S. There is set of adjustable arms new available on the billboard for 250 shipped. Great price.
