Not a Jk expert, but I would say its due to the motor being a v6, and NA. Its not a v8....but similar in the sense of if you want to make more power, the only real way to do so with out adding a supercharger or turbo, is to do heads, cam, and exhaust. But I dont know if there are aftermarket parts for the items that I mentioned.

I had the TBS (got it free w/ my Airaid) but immediately sold it on eBay for $70. Everyhting I've seen is that they do nothing on a fuel injected engine, so I didn't waste the effort installing it. Plus it meant I essentially got my Airaid new for about $150.

This has nothing to do with the throttle body spacer, but you asked why the JK responds poorly. Simple. The engine is a 60 degree V6. Had it been a 90 degree V6, it would have been a tire scorcher. Spanning the banks farther apart has a tremendous affect on torque output.

Spacers work well on a throttle body injected engine, but their signal is very similar to that of a carbureted engine. Like you, I completely agree they are totally useless on the JK.
