It kind of depends on the situation. Is it the stock diff cover that just started leaking out of nowhere, or were you wheeling and peel it back on a rock? If it's the stock cover, and there's no evidence of damage, I'd take it back to the dealer and have them fix it under warranty. If you damaged it wheeling, then get yourself some new aftermarket covers of your choice and replace them.
EDIT: Sorry, just saw it's an '07 and most likely out of warranty. You could try to retorque the bolts and see if it stops the leak, or pull the covers and reseal and refill.

If the cover is dripping oil, you should remove and reseal it.
If you are seeing oil residue in the housing, check the oil level, clean the residue off with some brake parts cleaner, and see if/where it starts to leak again.

How bad is the leak? If it's just a little seepage, it'll be fine to drive. If it's dripping and forming a puddle, I'd check the level first to make sure there's still enough there.

Remove the fill plug. The level should be right at the bottom of the fill hole. But a word of warning, mine was overfilled from the factory and spilled out all over the place when I opened the fill plug. Diff fluid is nasty, smelly stuff. You do not want to get it on you or your clothes. If your cover looks like this picture, it shoud be OK to drive. I drove like this for almost 3 months. And yes, your extended warranty should cover getting it fixed.
