After days of deliberating and I don't know how many websites, I am most likely gonna go with Pro Comp Rock Crawlers Series 98 17x8's with Toyo Open Country M/T 35x12.50x17. I have read that 17x8 will hold the tire better and less likely to lose the bead than 17x9's. So, I want to make sure I have my wheels/tires matching correctly. It's a daily driver with plans to hit trails such as Signal Peak, Rubicon ( oh yeah...we'll be taking the bypasses), etc. Would love some feedback, particularly about the tire/wheel match.

Like Ryan said, they'll be fine as long as you don't mind the wheels sticking past the fenders a bit. I also went with 35x12.50r17 but on 17x9 with 4.5" backspacing.
I wanted to go with Level 8 Trackers, which were 17x8.5 and 4.5" backspacing, but they were sold out along with every other similarly styled wheels at DT.
I ended up going with Level 8 ZXs. Learned after they could order Pro Comp wheels, but I glad I went with ZXs since it's different than the Trackers/Mickey Thompson Classic/etc style which seems to be a favorite on here.
