I think that this solution is safer than most IMO.

That may aggravate some people, but trust me, it's WAY better than going through the steps to remove and reinstall them every single time you want to pull the doors!

Great call
Sell the stock spare with the other wheels and tires. Then buy a 5th wheel for another $40, and buy a used 35x12.50R15 off craigslist for the spare.
With the ESP on the JK, it can be problematic to try to rotate your spare with your other 4 tires unless you do it frequently. In other words, if you wait to rotate a brand new spare into the other 4 until you have 7-10k miles on the other 4, you can end up with ESP issues because your spare will be taller than the other tires (less treadwear).
So, most people do not rotate their spare.
It is so easy to find a common size like a 35x12.50R15 used, or that has 0 miles on it because it didn't get rotated in on a TJ/YJ/XJ or other rig at a cost of 1/2 or less of new, it makes good sense to go that route if you are doing a budget build.
I only eliminated it from my list because of the "budget build" theme.
