Going to order tires this week. Cant decide between the 11.5 or 12.5 wide. Price is only couple $ dif (so not factor). Clearance shouldn't be either with a 2" Rancho Sport lift (leveling), cutting fenders, & buying new 17x8.5 wheels.

I am leaning toward the 11.5 for less weight and rolling resistance. This will not be hard off-roading at this time.

Any factors to tip 1 way or the other?

I'm happy with my 285/75/17 but one reason I went that route was because here in PA tires can't stick out past the flares for inspection. I guess a bonus is that I am no where near rubbing anywhere.
I am running a 17x9 wheel with 0 degrees offset.

I am running 285/75-17's on stock rims and have zero complaints but I like the pizza cutter look and they perform very well. I have an auto with 4.10's on a new rubicon. Visually the fatter ones will probably please more people in the looks department.
