I'm going to go with an AEV 2.5 lift and have sway bar disconnects installed. Which tire size can I go up to without having to change anything else on the jeep?

is there a difference between wheels/tires? ( sincere question, I'm still pretty new to all of this)

2.5" is plenty to clear 35s. If you use the stock wheels, you'll need to add spacers. You may want to change the gearing in the future but it's not absolutely necessary. Look into a tuner to change shift points and adjust for tire size. You'll also need to think about carrying the larger/heavier spare tire.

You can also go 35X11 with out spacers. You just need to add a couple washers to the steering stops. Toyo and Nitto make those sizes. If you have a Sahara, i'm assuming you have 18" wheels. The size you're looking for is: 285/75R18.

you think a 2.5 lift with 33's would be a waste of money?
I'm not looking to do rock crawling or anything crazy like that. The trails up in big bear are pretty good and I've done a few of them with stock.

The lift is not a waste. If nothing else, it will help give your undercarriage some clearance so you're not scraping so bad. The break over angle on a JKU isn't as manageable as a 2 door. My buddy just bought a new Rubicon and when we went wheeling a few weeks ago he scraped on almost every hill. Almost got high centered a couple times on some relatively mild stuff.
