My '08 owners manual came with a bright yellow "supplemental" card that had these exact steps on it... along with a big WARNING that reads

With ESP in the permanent disable mode, enhanced vehicle stability offered by the ESP and ERM systems is unavailable. In an emergency evasive maneuver, ESP and ERM systems will not engage to assist in maintaining stability. This disabled mode is intended for off-highway or off-road use only. Wehicle modifications requiring the owner to configure the vehicle in the ESP disabled mode, will seriously affect the vehicle roadworthiness and safety and may lead to loss of control and accident.

Like I said this card came with my owners manual.

I've got a stock '08 X and I have never had ESP come on. In the next few weeks I will be adding an OME and 33's, much like you have (love the look) and am currious about ESP coming on. You see, I was bore with this disease where my right foot is 50 lbs heavier than my left foot ! With this being my first Jeep I am having to put my foot on a diet. In my old 5.4 liter Ford 4x4 this disease was a whole lot more fun but now I am looking for a different type of fun but walking with a limp while learning it.
I was going slow. I am going to wait untill I disable it and see if it corrects on it's own.

I had this issue when I swapped my stock x tires and wheels for the Rubicon moab wheels and 32" BFGs. For about a couple months every cloverleaf, and twisty turn the ESP would kick in. Took it to the dealer for the G40 recall and asked then to re-flash the computer for 32" tires. Problem solved, it made a HUGE difference. Plus it will correct your speedometer and it will be accurate again. Very happy I did this, its then best $46 I have spent on my JK.

Some folks on hear claim that the ESP learns from your driving. I did not find that was the case. The ESP was as sensitive the first day I got the new wheels/tires as it was two months later (and a couple thousand miles) when I took it to the dealer. But, immediately after the dealer was done I took it on three cloverleafs that had always been a problem. Only once did the ESP kick in, and it was much less abrupt that it was previously. I have been on the same three ramps several time in the past month or so and it has never kicked in.
