Look at the Tule T2
I bought a Tule T2. Really a nice rack. May or may not fold up depending on your tire placement. I bought it because we have full suspension mountain bikes that do not play well with the normal racks that want to use the bicycle top bar.
Buy from REI and you can take it back if it doesn't work for you.

Hitch extender
You can get a hitch extender for the Thule T2. It weighs a lot :( I went with a 8inch extender (2inch to 2 inch). One nice thing about the Thule bike rack is that I can hold the rear tail gate open with it using the front tire carrier as a brace. With the T2 you can lower it and with the 8 inch extender it allows for full swing of the tail gate.

Also, you may want to invest in a hitch lock as well. Thule has a special lock for their hitch racks, and I purchased another hitch lock and for my hitch extender.
