Back to the original question re: the Olympic rear bumper/tire carrier/winch combo ... I heard that it rattles quite a bit.

As to rear winches in general, I've heard that they impinge on departure angle.

It's been suggested that it might be better to travel with enough gear to rig a front mounted winch to pull from a rear tow point ... using lots of snatch blocks and stuff. Of course, this assumes that you have enough line and enough anchor points for securing the snatch blocks.
