It doesn't need to be a semi-satin black does it? I'm looking more at a grey color.

it can be any color you want

Its just easy to blend in black for touch up purposes

Dude go to Walmart, get 120grit sand paper, Mineral Sprits, some Plastic Sheeting, 2 jars of Rustolium Bed liner, 2 rattle cans of it, some 550 cord, painting mask (this is a must lol), A few rattle cans of primer for 2-3 coats, A small roller and trey and a paint brush that is 1-1 1/2" wide to get in the cracks and corners, latex gloves if you get down that way.
Steps
1. Sand the surfaces
2.Take mineral Sprits and rag wipe down real good
3.Hang plastic sheeting, 550 cord, and first thing you want to paint.
4. I do 3 - 4 coats of primer, but 2 is plenty. Let dry for a few hours
5. Now fun part
6. Pop open that can and get to rolling on thick and nasty lol, use the paint brush to get in the tight spots, and use the rattle cans to get the inside of the bumpers and for touchups
7. Crack open BEER and Chill for a bit, You can start the next coat in about 30 - 45 mins if you have nice ventalition.
8. I'd do 3 thick coats, thats what I did and it came out great and very tough.
9. Give it a good 24 hours before you install

Wait if I put a self-etching primer, then bedline, would it still trap moister on the metal?

No it wouldn't trap any moisture as long as you let everything dry. And the above technique is extensive. Very well done but I don't even go to those lengths. Scuff/sand then I hit the whole thing up with a fine wire wheel. Spray the whole thing with brake clean and wipe down. 2 costs of self etching primer then 3 costs of spray can bed liner. Wait till the next day and install.
