IMO, being on rock/tree trails, up here in the East Coast, we try to achieve 90:1-100:1. Any lower than that, no wheel speed and high RPMs. We're not one for using 5th and 6th gear when wheelin. 1-3 gear TOPS.
With the 5.0:
With 4.88s, you'd be at 108:1
With 5.13, you'd be at 114:1
With the 4.3:
With 4.88s, you'd be at 93:1
With 5.13s, you'd be at 98:1
Now, depends on tire size.
With the 5.0:

Depends on whether you plan on adding an underdrive someday. Right now there are none that fit well on the drive line--but someone like atlas will make one eventually.
The twin stick of an Atlas is nice--no question. Between a 4.3 and 5, that depends on what yuo like. A 5:1 is nicer for engine breaking. A 5:1 still isn't low enough to do super slow rock crawling, but it is better than a 4.3:1.
I have a 5:1 right now. It is decent.
My two cents: If you are going to buy one transfer case from here on out, the 5:1 probably is better.
