Actually, thanks for making my point. If you go to the Super Swamper page, look at the "Rim" column. The widest tire they have that fits on a 7.5" rim is only 9" wide. I have no doubt you can squeeze a bigger tire on a too-small rim, but how does it air down? Does it void any warranties? How is the load rating affected? Any wear issues since the tire will tend to crown? Will the tire roll off the rim easier?
There may be some advantages to running a narrow rim. Less likely the tire will pop a bead?
I heard of a rule-of-thumb that the tire width should not exceed 4" of the wheel width. Given that unconfirmed rumor, 11.5" should be OK.
These are the issues I've been wrestling with since I would also like to put a bigger tire on the stock rims.

My JK with BFG M/T 37x12.5x17's on a stock Rubi wheels.
And yes the manufacture does not reccomend these tires for these wheels, but.............
BFG also doesn't recommend running my tires with 7 PSI offroad, which the narrow rim helps maintain much better than a wider rim.
Jeep recommends against modifications to factory suspension systems.

I am running 35X12.50 on my stock 17's with no issue. I will actually run 10 lbs of air while i am offroad without one issue. People have been doing it for years without a problem. I run 26 lbs all around for daily driving leaves a great foot print and rides even better! JUST DO IT

With my procomp rims, my 35 mounts fine on the rear. With the stock tire, you will have to put a spacer (same spacer you'll use on all 4 tires) on the stock tire carrier.
There are a bunch of threads were people have done this. I would have gone this way if I hadn't found a good deal on my procomps.

edit......There's also a company that made a plate that mounts like the spacer but raised the tire up an inch or so.

My 35 clears everything just fine on the tailgate. NOT stock wheels though. ProComp 6089s. If the backspacing was .25" less it would rub the stock rear bumper. I cannot see the stock wheel fitting in any way shape or form without a spacer as it would be sucked in there too close.
As an asdide... I do like how the engineers thought ahead and set the third brakelight high enough that it clears a 35" tire.
