I was told that if I put the bigger lift in but keep short shocks on I won't have driveline issues. Then when I want more flex I just put longer shocks and driveshaft on.

I would discourage running too short shocks off road. If you aren't going off road, then there is no reason not to run the correct length shocks.
Again, on a 2 dr, a 3" lift or taller requires rear coil correction and a trackbar that provides enough clearance for the rear passenger spring.
