-30mm or - 19mm offset
Ordering 15'' trackers today. My question is which offset should I go with. I see most people have the - 19 offset, but I like the wider stance. Would the - 30mm offset cause that much more stress on components?

First off most people with aftermarket wheels have -12 mm offset not -19 mm. And that's alread too much in regard to tread coverage from your fender flare - your tread sticks out and that's illegal.
So -12 mm already gives you a significantly wider stance but you will get away with it most of the time. However -19 mm is getting a bit extreme and -30 mm is ridiculous in my eyes. It would be a matter of time until the 5-0 pulls you over with -30 mm. A trailer queen would be a different animal of course.

I have the 15 trackers with -30 and love it. Think it looks right as gives it a good stance, not sure where you live but I don't have any problems with the law, and its def not "ridiculous" at least in my eyes. If you go to one of discount tires threads you will see that the -30 is the most popular option.

An offset of -32 mm equals a backspace of 3.5" to 3.75" depending on the width of the wheel (8.5" to 9").
If a backspace of 3.5" to 3.75" is what the majority of JK owners are running then I shall stand corrected.

This is completely dependent upon the state in which you live; in Florida, only commercial vehicles are even required to have fenders or mud flaps (FS 316.252(1)).

I was referring to the majority of people running the 15x8 level 8 trackers not all together, I believe it is 3.625 or something like that which is a good amount of bs and tires will stick out past fenders but if you like the wider stance( like I do, and he said he liked that look earlier) than these wheels will work fine.

Just FYI - although the wide stance is really nice, be prepared that you're going to be painting the side of your rig with dirt every single time the road is even a little wet. Not a big deal, but figured I'd pass it along...
