Okay so I know that I'm getting 17"x8.5" wheels with a 5x5.00 bolt pattern. However, I have no idea what the best offset would be... The wheels I want to get only come with either a -6 or +6 offset on their 17" wheels. Which offset would be best?
* I don't know if it matters but I'm getting LT315/70R17 tires and a 2.5" lift *
Thanks and sorry for the stupid question

Backspacing is a much more user friendly term than offset, so you might want to just convert your offset to backspace to help you decide. (negative offset = less backspace = better results for larger tires, but do the conversion)
You can find some backspace recommendations in both of the threads stuck to the top of this modified area.
DTD's explanation of offset vs backspace, and how to convert.

A chart, though I haven't compared it to doing the math conversions:

Yeah, it's probably a lot of trouble to open links and read.
+6 = 5" backspace
-6 = 4.5" backspace
One sticky:
The other sticky:
So unless you have fender coverage laws that you need to consider, the 4.5" backspace rims would be the better option.

One sticky:
Q: What back spacing will I need on my wheels in order to clear 12.50 wide tires?
A: I would recommend that you do not exceed 4.75" of back spacing and even at that, you may still have some minor rubbing up front at a full turn. Also, I would recommend that you do not go any less than 3.75"

Net max back spacing:
5.5” for a 33x12.5
4.5” for 35x12.5
3.5” for 37x12.5
1.75” for a 40x13.5
