How is your JK doing with those 35's? I don't want my 2011 to suck on the road with heavy 35's. I'm looking at the BFG AT to save some weight.

You wont want Toyos if you are looking for a light tire. The 35" is the same weight as the BFG 37". The BFG AT, KM2 and Goodyear MTR are the lightest offroad worthy tires.

I'm looking at 35x12.5x15. BFG AT is 53 lbs, MT is 60 lbs

I really don't notice that much difference so far. For an auto, RPM's are a little higher going uphill due to the stock gears. I was already planning on a future regear. I'm sure gas mileage has gone down.
