This will be my daily driver, and have never done off roading, but will give it a try.

So would the the extra 2K be worth it, the 2K really isn't a big deal to me, would a Rubi be easier to sell later, keep better value?

Personally I would go with the X and build up from there but, out of the two here . . . The Rubicon.

Does the Rubicon give up any of the things the Sahara has?

Painted fenders. 18" wheels and Bridgestone Duellers. Other than that, some of the things are optional on the Rubi, such as tinted windows. (if I remember correctly) The wheels and tires are replaced with 17" MT's, which are more expensive, but may not be as quiet on the road.
