Looking to replace my 255 R70 18 with 285 R70 17/18 on my 2012 wrangler. Is that possible without making any adjustments? Can I use 17" instead of 18"?

Yes you can use 17" wheels and tires and it should not be an issue wit fit. If you are going to 17" wheels get some with 5" or less of back spacing. A wheel with 4.5" of back spacing is good for up to a 35x12.5" tire.

I run a 35x1250x15 inch rim/ tire on my 15jku. Most guys only go as far down as 16 if they want more sidewall.

But 17 is kinda the go to. Allows oversized brakes and the higher quality HD steering for 35 plus tire size.

As as long as the bolt pattern is the same, you can run whatever rim size you want, more or less.
