I use a Hitch Haul, like Namtaru posted pics of. It works fine.

 

Bought the exact same rack at harbor freight today. I like the rod holders you mounted to the side. I'm definitely going to go with that idea! Sweet looking rig as well.

 

I've hauled many many deer over the years on a hitch rack. But I have also been hit in the hitch rack twice. The fold up one would be ideal, but I don't think it would work unless you got a long hitch extender. Then you can't get in and out of the back easily unless you lower the rack, so that could become a pain.

 

I've got the same set up but I put a hitch on the front so I don't have to take the big cooler off to open my reargate
