Basically I just have to loosen the bolts on the drag link, center the wheel, and retighten right?

Yep, two bolts.
Turn the turnbuckle, check the wheel.
Once it is straight tighten her up and you should be set!

BAS/ESP light went out after we got the steering wheel centered. Took about 10 miles of driving.
