A taller sidewall also means more surface area exposed to hazards on the trail.
Since most people want to go to increasingly larger tires over time, you will end up needing larger wheels to fit the inevitable 37's, and you will pay more in the long run.
You will also limit your choices for aftermarket brakes.
And, the taller sidewalls will not perform as well on the road as they do off-road, due to the extra sidewall flex that gives them some advantage off-road.
