C is softer so one gets more grip and rides nicer. E is harder riding but better for on road wear life. And first set with a basic stock vehicle for Jeep anyway is recommended no bigger than 33". 35" and larger you are starting to get into suspension add ons or fenders etc. Think $$$$$. Next is a winch for those lonely days out by yourself.
Truck tires ride stiffer, but they have their advantages. Lower load range tires have softer sidewalls and are more likely to be damaged by rocks or downed trees and are more likely to break a bead. Tires with stiffer sidewalls stay on the rim better.

Another tip - as most of us are aware a good addition to the trail pack is a shovel. Also consider a small adze for making steep contours more shallow. Way easier than shovelling but consider this story - back in the 70's I worked with a lot of WW2 vets and one guy said he was in Egypt in 1940 and he said you could not believe how fast you could shovel dig a foxhole to jump in through rocks and boulders when the shells were raining down. Bless his soul.
