The drive to the trail is usually not a long one and as for the trail it self, my kids enjoy the rock crawling and the mud bogging as much as I do. I thinking more about when they get bored at the campsite. If I could mount a monitor on the tail gate they would have more space with the back seats down. With most of your suggestions I kinda got an idea how I'm gonna run it. Mahalo for the input.

You could make a setup which is similar to mine, where I just connected 2 portable DVD players and mounted them on the back of the headrests.
The portable DVD players have A/V ins and outs. Thus you could plug the A/V out from the Xbox into one of the DVD players A/V INS and then the A/V out of that DVD player into the A/V in of the other. Each kid would have their own display showing the same thing. For sound you have 2 options. You could buy 2 pairs of headphones which would then plug directly into each DVD player's headphone out, or you could run a wire from one of the DVD's headphone out and plug it into the Aux input of your radio. This way the sound would be heard through the speakers in the J/K.
This setup would also keep the kids occupied while you're driving....they could watch a DVD movie or play their Xbox.....Thus, that was my original intent when I put my setup together, since I had a long 24 hour road trip.
The only thing you would need to buy is a DC to AC power adapter to power the Xbox.
In my setup, I'm running the video out from the MyGig to underneath the passenger seat, I then wired the video INS of both DVD players together in parallel so that when I plug the MyGig Video out it to that connection that video signal gets displayed on both displays by selecting the Video Aux IN on each of the rear displays. Under the passenger seat, I have the wiring setup with RCA A/V connectors so I can easily disconnect the video out coming from the MyGig and plug in the A/V outs from a video game console that would then feed both rear displays.
I did it this way with my setup since with the particular DVD players I got, you couldn't have the Aux A/V IN selector switch active and have that signal go to the A/V out at the same time, since it was a multi A/V IN/OUT selector switch using the same Jack on the DVD players....but they certainly do make portable DVD players that have that capability. They even sell them in dual display kits to do just that.

I have a setup very similar to Red's in my truck, save for mine does not have portable players. There is a device called an Audio/Video selector, that allow you to hook up 3 different sources into this box, then distributes them to wherever you need them. Mine is a Kenwood, and it was around $100.
For example, one screen can have a movie going, the other have the Xbox playing, and the main head unit up front could have a different movie going, or any combination of the three. Works pretty sweet, when driving up front, we can switch on what the kids are watching in the back or see what games they are playing on the Xbox.
My kids love the Xbox in the back when traveling, they never touch it once we get somewhere.

I have the same setup. Money well spent IMO. They have aux in too, so you could hook up your game system to them if you wanted to, and had a power inverter.
We take lots of trips in the Jeep and it's worth having them to keep the kids entertained on the road.
I have to agree with the others though...you're fishing! Give em a pole!

Don't get me wrong, I live in Hawaii, a place where most kids including mine learn to fish, swim, surf, hunt &farm from
a young age, but even that is not enough activity to keep them from bugging me when I'm in the middle of a beer and a 50lb. Ulua. I do like the set ups that was posted but the "$4.50/gal and rising" problem is gonna put this project on hold.
