I think I found what I needed.

That should address the wiring issues.
Now I just need to decide on a nice Double DIN unit. My only "must have" feature is the front USB port so I can just play music of flash drive media.
I think this Kenwood is a pretty good deal for $239.99:

Any tips on a good head unit that's in that price range? I don't want to go over $250 for it.

Yes, you've got the right adapter picked. The CHTO-03 is what you need. FYI, there are also adapters made by PAC and Peripheral. But you'll need one of them to add an aftermarket HU to your Infinity system.
