New speakers/Same Headunit?
Would it make any difference to change out the stock speakers, but keep the stock headunit, or is that pretty much self defeating?!

it depends on what you are looking for and how happy you are with what you have now.
without adding new amps, just replacing the oem speakers will make a small difference only.
if you are very dissatisfied with the oem system, then i doubt replacing the speakers only will make you any happier.
replacing the stock speakers will add a little sound quality that you may or may not notice on a regular basis.
