I've been thinking about getting the plug and trim pieces and wiring it to my own inverter.

The factory inverter is very unimpressive, We tried to use it on an air mattress pump at the beach, it didn't even have enough juice to do that. Really pathetic, I thought it would atleast do that. I was a bit embarrassed that it was even in there after myself and a friend had to run down to the camping store to buy a real one.

Yeah. It's really not good for anything more than charging a phone or tablet.

I purchased this inverter which comes with a remote outlet (that also turns the inverter on and off)

I've used it to run a shop vac as well as angle grinders and such with no problems.

Is there any way to have the outlet flushed mount in the truck for easy access when driving ?

That link goes to an inverter that comes with a remote outlet that mounts flush. The cable between the remote and the actual inverter is something around 8 feet long too, IIRC, so you can mount the inverter wherever and then run the remote outlet to where you like. Additionally this also means the you have two locations with outlets because the inverter will also have an outlet. I'm very pleased with this product.
