This is pretty much exactly where I'm at. I just bought the harness to connect my head unit to the stock jeep connector that supplies the head unit. This only provides constant power for your unit (black and yellow), so like has been said previously, you need to tap into the switched power (red) on the cig lighter socket. I wouldn't bother with the expensive model that interprets the bus signals. I'm yet to find a harness that will let me piggyback off the cig power without splicing the wiring.
I also ordered the PDX-5, and I hear a kicker solo 8" driver to replace the stock subwoofer, in the stock enclosure provides great results.
And depending on head unit, but my alpine unit has a light sensor which provides automatic dimming.
Also, how are you planning on powering your amp? Hooking into stock amp harness, or running better wiring?

I'll be honest, i wasnt planning on using ANY harness for the radio. Unless im mistaken, i should be able to simply tap into the existing remote, dimmer, and power supplies, correct? then run RCAs to the amp, and speaker/sub wiring from the amp to the rest...?

I planned on running new power & ground for the amp, as well as the speakers/sub. I figured why i had it all apart, it would probably be easier just to run new and be done with it. That way i know everything is hooked up the way i want.

You don't really need the harness, it just prevents you from having to splice the wiring on your stock radio connector. I got the Metra 70-6522 harness and just used the black and yellow power connectors.
I'll post up a diagram shortly of what i'm installing.
