Sig p250 is a hunk of junk. Stay away from it. They have severe trigger problems.

I'm 5'6" 160 lbs and have no problem concealing a double stack Sig 229, or Glock 32. I do it for a living. Anyone can conceal anything, you just have to work at it. It helps if your chest is bigger than your middle. However, I know plenty of big belly guys who conceal just fine. It is more important to find a holster and place on your body that works for you. It takes experimentation and sometimes blowing cash on rigs you won't end up using. But ultimately, it could save your life. I would recommend Minotaur hybrid holsters as a good place to start.
