My favorite is dutch oven cobbler... and its a lot easier than you think.
1 can of sprite/7up/pineapple juice (Take your pick... I like pineapple best).
1 box of yellow cake mix (something like Duncan Hines moist mix, I don't always use the full box)
1 cube of butter (The only thing that spoils in this recipe, and salted butter keeps for a bit)
1-2 cans of peach pie filling
its really simple...
put the pie filling in 13x9 pan (Dutch oven also works!!!)
put the DRY cake mix on top of pie filling...
melt butter and pour on top of dry mix
put about 1 cup of pineapple juice on top of dry mix (make sure all of the dry mix is covered.
cook @ 350 until golden brown on top (about 40-50 min)
If you cook this in a dutch oven make sure to put a couple coals on top and on bottom for even heat.
Do NOT mix the cake mix... the mix will pull moisture from the peaches on bottom and the butter and pineapple on top.
Other pie fillings can be used... but peaches seems to be the easiest.

I like to pre-cook beef strips, potato wedges, carrots and mushrooms a few days before heading out. Wrap it in aluminum foil and put it in the freezer. (Note: Do not forget to remove it from the freezer and insert into your food pack before leaving the house!)
I warm it up on the edge of the fire at the campsite. Tough to beat that after a good day paddling.

On our club's last run, a British guy who's been in the club forever brought along his Coleman stove and a non-stick omelet pan and he made himself the best-looking omelet, which he enjoyed with fresh hot tea. So British, so tasty....!!!

If were fishing my favorite is fresh walleye fry with some breading, fry some potatoes and onion slices, while heating up a can of baked beans...wiping the drool off my chin just thinking about it.
